Our interest in the food coop has been fueled by the desire to learn more about healthy foods, cooking, and lifestyle.
For years I had unexplained constant muscle pain. I was only 53, and was ready to quit a job I love because the pain consumed me. My doctor diagnosed me with Rheumatoid Arthritis. When the Humira, Prednisone and Methotrexate drugs didn’t work, she diagnosed me with Fibromyalgia
On Halloween of 2014 I ate my fill of candy. That whole weekend my pain level went to a new high. I’m sitting and watching Public Broadcasting on TV and Dr. Davis comes on talking about his book “Wheat Belly” Eating wheat, processed foods and too many carbs can cause bloating and inflammation. Well I had plenty of both.
I immediately stopped eating anything with wheat in it. No bread, flour, cake, cookies. Within 2.5 weeks I was a completely different person. Nearly a year later I feel like a 30 year old. I have lots of energy and I lost 25 pounds. It was a miracle.
John and Angel at Custom Health Pharmacy helped me a great deal. Did you ever notice how much energy and passion Angel has for the work she does? Now I know why. She knows that a healthy lifestyle works. I see that same energy and passion in many of the coop board members and seed members.
I’m hoping that the Clipper City Coop will provide a resource for Manitowoc residents to consider looking at what they eat and seeing if making changes can help them. In the beginning, I didn’t even know how to cook some very basic foods. Fortunately some great friends helped me! Even with limited knowledge, residents can go to the coop and purchase healthy foods—and have knowledgeable people available to get started on a healthy lifestyle.
I am very thankful that my husband Dan has joined me on this journey.
